Thinking of ideas for a Christmas dish or for any special celebration, I thought of preparing a sirloin steak in sauce.
It was so delicious, that today I will explain the recipe, step by step, of this pork tenderloin in a creamy white sauce, with pieces of mushrooms and a little coriander that gives a perfect balance of flavors to the dish.
Recipe of sirloin in sauce
For this recipe, we will not need the oven, but we will need a large pan.
If you do not want to use pork tenderloin, you can also use beef sirloin.
Sirloin in mushroom sauce
Learn how to prepare this sirloin in mushroom sauce for your meals with this cooking recipe, explained step by step.For this, we will peel the onion and garlic cloves, and chop everything very finely. In the case of garlic cloves, it is better if we can crush them.
Then , heat a stream of oil in a pan, and add the onion and garlic. We will do this over medium heat, and let them cook for 5 minutes, with the aim that the onion begins to become a little transparent.
To continue, we will add the mushrooms cut into slices (this, based on the principle that the mushrooms were already well cleaned before being cut).
We will cook them for a couple of minutes and then add the wine to cook with the mushrooms. Mix and let them cook together for 5 minutes, so that the wine is reduced a little.
Then, add a little salt and pepper, stir everything and then add the broth, if we have decided to use it.
Let the sauce cook for 5 more minutes. Meanwhile, we will use to mix the flour with a pinch of salt and another pepper, and then pour it into a dish to flour the sirloin.
We will return to the sauce to add the cream of milk. Mix well and try to check the seasoning. If necessary, we will adjust it with salt and pepper. Then turn off the cooking and reserve our white sauce.
In a large pan, heat a jet of oil to fry the floured sirloin. We will do this at medium-high heat, to make sure to seal the surface well, but looking for the meat to be tender and juicy inside.
Let the sirloin seal on each side, before rotating it. This operation requires a lot of attention, to determine the point at which the flesh has to be turned. It has to be cooked to the outside but without being passed, so that it does not dry out.
Once the sirloin is sealed on all sides, we will add the sauce to the pan, and let the whole cook for another 10 minutes.
That's it. We already have a sirloin in sauce ready to eat, but we still have to decide how to serve it. It can be served whole and chopped on the table, but I find that it becomes complicated. I prefer to take the meat out of the sauce, place it on a board and chop it on thin wheels, then arrange several on each plate, bathe them with a little white sauce and decorate with the chopped cilantro. Above all, do not forget this last touch, because it really makes a difference in the final taste of the dish.

- Under no circumstances do you pay attention to those who say that you have to prick the sirloin with a fork. No, absolutely not. This will only cause the meat to lose its juices.
